Skewered Sausage Squares

This is a variation on the shish kebab theme. Any hard or semi-hard homemade sausage works well in this recipe, so tailor it what you have on hand or have a taste for.

  • ½ pound cured sausage cut into half – inch cubes.
  • ½ pound Swiss or mozzarella cheese cut into half- inch cubes
  • ½ stick butter
  • 1 teaspoon lemon juice
  • 1teaspoon paprika
  • Dash of cayenne
  • Toothpicks (approximately 20)
  1. Alternate cubes of sausage and cheese on the toothpicks. About two of each should do it depending on the length of your toothpicks.
  2. Melt the butter in a medium- sized skillet and add the lemon juice, paprika, and cayenne.
  3. Sauté the skewer gently until the cheese get soft but does not melt. Serve warm on a heated platter.

Serves 8-10.

Liverwurst Munchies

Liverwurst and onions…and mayonnaise…Romeo and Juliet…springtime…need I say more? This is a classic combination, easy to prepare and delicious.

Ingredients Needed

  • ½ pound homemade liverwurst Mayonnaise
  • 1 small Bermuda onion, sliced very thin
  • Stuffed green olives, sliced
  • Toasted round of Italian bread

How to make it

  1. Mash the liverwurst with just enough mayonnaise to moisten it slightly.
  2. Place a thin slice of onion on each toast round. Spread liverwurst over the onion and garnish with the sliced olives.

Serves 8 to 10.
